Brooke Abbott: Building a Gluten-Free Bakery for Good

Most college students spend their time trying to figure out what they want to do. Brooke Abbott, a junior at FSU’s Jim Moran College of Entrepreneurship, already has the answer.
Growing up in Texas, Brooke dealt with chronic stomach issues that doctors couldn’t explain for years. By high school, the diagnosis was life-changing: she was severely allergic to both gluten and dairy. But instead of letting a restricted diet slow her down, Brooke saw an opportunity to serve a massive, underserved community.
The “Celebration” Strategy
In 2021, Brooke launched All The Goods Gluten-Free Bakery. For her, this wasn’t just about selling muffins; it was about reclaiming the “experience” of food.
“They are not just getting a cupcake; they are getting a full experience of celebrating with their family and friends,” Brooke says. She realized that her customers were not just buying gluten-free treats, they were buying peace of mind. They were buying the ability to celebrate a birthday or a graduation without the fear of getting sick.
Building the Brand at FSU
Brooke took her high school hustle and scaled it using the resources at FSU. Balancing a full course load while acting as CEO, baker, and accountant, she has refined her business model through hands-on learning.
- Farmer’s Market Success: She started by nearly selling out at local markets, proving there was high demand.
- Academic Excellence: Her professors at the Jim Moran College describe her as the “epitome” of a student entrepreneur, someone who can manage a scaling business while excelling in the classroom.
The Road to Jacksonville
Brooke is already looking toward December 2026, the month she graduates. Her goal? Moving to Jacksonville, Florida, to open a brick-and-mortar bakery.
She envisions a full-service hub where people can walk in for sandwiches, bagels, and coffee without ever worrying about cross-contamination. Brooke isn’t just building a bakery; she is building a haven for food lovers.
The Takeaway for Student Founders
Brooke’s journey shows that the best businesses are often born from personal pain. By leaning into her own challenges, she created a brand that people trust. For every student builder, her story is a reminder: if you can solve a problem for yourself, you can likely build a business for the world.
